Alan Hughes - Biography
Argentinean-born Alan Hughes started his career as an apprentice to Chef Francis Mallmass when he was 18 years old. He progressed with his career by moving to New York in the late 1980s to attend the French Culinary Institute. Once he graduated, Hughes could not be stopped. He worked the rounds at some of the most highly acclaimed restaurants of the time, from The River Café to Bistro du Nord. With an arsenal of experience, Hughes decided to travel for work, and cooked in cities from Miami to Tepoztlán, Mexico from 1994 to 2002.
Eventually, Hughes set up shop in Miami, opening One Ninety, a hub for Miami’s artistic community, in 2002. Since then he has taken on the title of executive chef at The Embassy, a European American gastropub.
