Pastry Chef Shuna Lydon of Eggbeater - Biography

Shuna Lydon is a fruit-inspired pastry chef, baker, and writer. Her blog, Eggbeater—named one of the “Top 50 Food Blogs in the World” by the London Times—delves into the lives of cooks, chefs, kitchens, and the reality of the not-so-glamorous lives they lead. Her writing was also featured in Best Food Writing 2007. She has cooked at Gramercy Tavern, The French Laundry, Aziza, Citizen Cake, Peels, and Anna Hansen’s The Modern Pantry in London.
In 2011 she was nominated for “Outstanding Pastry Chef” by the James Beard Foundation, and won StarChefs.com’s New York Rising Star Community Chef Award. Lydon writes a bi-monthly column called “The Egg Beat” for Medium.com, profiling pastry chefs. Her pastry philosophy mandates that the final course should follow the lead of the first, taste better than it looks, and that flour should take center stage as a flavor, as well as a textural component and ingredient.
