Winter Sour

Yield: 1 Cocktail
INGREDIENTS:
1 3-inch rosemary sprig 
1 ounce egg whites 
1 ounce Meyer lemon juice 
1 ounce simple syrup 
1½ ounces Campari 
1 small rosemary sprig 
METHOD:
In a mixing glass, muddle the rosemary sprig; add the egg white, lemon juice, simple syrup, and Campari. Cover and dry shake for 5 seconds. Add ice to the mixing glass and shake hard for another 5 seconds. Strain cocktail into a lowball glass with a Hawthorne strainer. Garnish the cocktail with the small rosemary sprig.
