2006 Brings New Flavor To The Harbor View Hotel
Veteran Talent Joshua Hollinger Joins as Executive Chef
The Harbor View Hotel in Edgartown, Martha's Vineyard, is proud to announce the addition of Joshua Hollinger as executive chef. Chef Hollinger will lead the hotel's culinary services at The Coach House restaurant, the Carlos Fuente Club House, and all catering and banquet functions. Hollinger brings with him experience from Drew Nieporent's Myriad Restaurant Group (of which The Coach House is part) as chef de partie at New York City's Tribeca Grill from 2001-2002.
Joshua was an executive sous chef at The Coach House from 2002-2003 and is thrilled to be back on the island. "This is no doubt the biggest opportunity of my career," says Joshua. "It's great to be working with Myriad again."
Joshua believes in cooking "close to the earth" and is excited about the products available from local purveyors. "I can't wait to create dishes using all the amazing bounty the Vineyard offers." His inspired cooking style is an ideal match for The Coach House: contemporary American cuisine with an emphasis on local ingredients. While maintaining and strengthening the restaurant's valuable relationships with island farmers, ranchers and fishermen, Joshua will continue to define The Coach House as the Vineyard's favorite New England brasserie with dishes like Bay scallops, roasted red beet risotto, Tuscan kale and Tahitian vanilla vinaigrette; Chatham cod, pan-roasted fingerling potatoes, braised celery and poached Sweet Neck Farm oysters; and Braised lamb shank, creamy herb polenta, roasted cipollini onions and juniper berry jus. Joshua looks forward to continuing The Coach House's cheesemaking and also plans on doing his own meat and fish curing and smoking in-house.
Chef Hollinger joins a talented staff, including Executive Sous Chef Scott Collins, formerly of the Vineyard's renowned l'itoile restaurant; Sous Chef Matthew Safranek, newly arrived from Tribeca Grill in New York City; Coach House General Manager Alain Michel, past general manager of New York City's famed Jean Georges and Montrachet restaurants; and Hotel Food and Beverage Director Jim Moore, who boasts a hand-picked Wine Spectator award-winning wine list.
Beginning Thursday, February 23, The Coach House goes Far East, offering an Asian-inspired menu every Thursday evening as part of its popular winter theme night series. Chefs Hollinger and Collins will tempt local diners with the Pan-Asian flair they learned working at New York City's Nobu and Vermont's #1-rated restaurant, The Waiting Room, which offers modern fusion cuisine in Burlington, respectively. Some of the featured dishes will be Hot and sour soup with chicken, shrimp, tofu and shitake mushrooms, served in a red and black vinegar and white pepper broth; Sweet and pungent crispy chicken wok-tossed with peppers and onions; and Pad Thai rice noodles with bean sprouts, peanuts and lime, served with chicken or shrimp. Theme menus will be offered Thursday nights in The Coach House from 6:00-9:00 p.m. and until 10:00 p.m. in the Carlos Fuente Club House. For dining reservations, call 508.627.3761.
