:Cocinar Mexicano to Offer Chefs Certificate Program with Mexico's Top Culinary School

Cocinar Mexicano, the village-based culinary program featured in Gourmet's new PBS series "Adventures with Ruth," is pleased to announce our second institute for food professionals. Based in Mexico City, the four-day five-night intensive runs from October 23-28th, 2009, in conjunction with the Centro Culinario Ambros�a, Mexico's leading culinary institute. In addition to three eight-hour sessions with the school's top faculty, workshop members will have access to the most exciting names in contemporary Mexican cuisine through our evening track of curated dining. Chefs confirmed for this exclusive track include Enrique Olvera (Pujol), Ricardo Mu�oz (Azul y Oro), Patricia Quintana (Izote) and Titita Ramirez (El Baj�o), who will join our party and host an insider's tour of their kitchens.

The curriculum for the workshop, drawn from Ambros�a's six-month degree program in Mexican cuisine, covers cooking with chiles, moles, regional specialties, Mexican fusion cuisine, traditional candies and a unit on wine, tequila and mescal.

Another highlight is our emphasis on integrating culture and cuisine. With Sunday free to explore the city, the group will visit the market of San Juan, tour the world famous Museum of Anthropology with Toronto-based curator Janet Dawson, whose focus will be the depiction of food in the country's pre-Hispanic art, as well as glide by night through the legendary floating gardens of Xochimilco to understand the ancient hydroponic agriculture of this city that was once an enchanted (and productive) lake. Participants will not only earn a certificate from Ambros�a attesting to their completion of the course; they will gain unique experience and insight into the techniques and pre-Hispanic roots of a cuisine increasingly seen as part of the world's great culinary heritage.


Format

Participants arrive in Mexico City on a Friday afternoon, and immediately plunge into the culinary life of the city and of Mexico itself. Our welcome dinner that evening is at Pujol, with Chef Enrique Olvera presiding and a post-dinner demo in his kitchen. Accommodation for the five nights, all meals, materials, airport transfers, ground transportation and tuition are included in the workshop price of US $2495. Departure is the morning of October 28th, following breakfast in Mexico City.
