Chef Mitchell Kaldrovich Opens Ocean View Sea Glass Restaurant at Inn by the Sea

When the luxuriously renovated Inn by the Sea opened it's doors this summer the spotlight was on Executive Chef Mitch Kaldrovich and his dynamic Sea Glass menu celebrating local agriculture and fresh seafood. Panoramic views of the Atlantic with bobbing lobster boats on the horizon serve as backdrop for the chef's creative dishes loyal to local produce and Maine flavors.

"We want to present fresh, familiar food in a new light, with just a touch of embellishment to bring out natural flavors," says Kaldrovich. "Our ingredients have a connection to both Casco Bay and area farmers, but we've added our unique international spin to all things Maine. Having grown up in Argentina and worked as a chef in Buenos Aires I enjoy blending my international experience with Maine ingredients. The idea is to capture the essence of coastal Maine, but to keep it simple and let the food speak for itself."

Kaldrovich is a native of New Jersey but spent his early years growing up in South America. "By the age of ten I was helping my grandmother prepare large family meals in Argentina," said Kaldrovich. "Cooking was a family passion, ingredients were carefully chosen, dishes prepared without rush, and meals were the center of family life. The best food was always at home, not at a restaurant. At an early age I became passionate about food and developed a lifelong interest in culinary excellence."

Sea Glass features signature dishes such as fresh seafood paella, Maine lobster bisque or clam chowder. The changing menu reflects the freshest locally available ingredients with velvety soups and organic salads, regionally raised beef, pork and lamb, seasonal game, organic chicken and an abundance of vegetables and handmade pastas.

Kaldrovich headed up a team of chefs to create "Gala By The Sea", the pinnacle culinary event of Portland Maine's Harvest on the Harbor wine festival in later October. Two James Beard award winning chefs, David Pasternak (ESCA, NY) and Sam Hayward, (Fore Street Portland)joined Kaldrovich in creating a six course gourmet meal with wine pairings at the Inn by the Sea.
