Veronique Valcke, Director of the Regina Hotel Group, is pleased to announce the appointement of Amandine CHAIGNOT as Executive Chef at the Hotel Raphael, Paris. CHAIGNOT brings a wealth of world class experience, a new direction and a new menu, perfectly complementing the contemporary re-design of the hotel's restaurant. Raphael Le Restaurant officially re-opened on April 16, 2012.
With her blond good looks, sparkling personality and cheerful smile, Amandine CHAIGNOT, 32, is one of the very few women to have taken the reigns in a top Parisien kitchen. True to character, she runs her kitchen with authority, professionalism and passion.
Not long after beginning her post-Bac studies in pharmacy, she realized her interests lay elsewhere and quickly decided to change direction and carreer paths. She discovered her true passion and calling in cooking and immersed herself in a rigorous course of study at l'Ecole Ferrandi, ecole Superieure de Cuisine Francaise (ESCF), one of France's leading professional training schools.
CHAIGNOT set her sights high and, little by little, she worked her way up through the ranks, cooking in some of the most renowned restaurants and along side the greatest chefs in France.
She arrived at the Hotel Raphael this past March and has created an elaborate new menu for Le Restaurant, focused on presenting the best possible seasonal ingredients.
She defines her cuisine as fresh, generous and real. Her menu has a contemporary flair while respecting the great traditions of French cuisine and technique in which she was trained. Featured dishes include Fines quenelles de volaille aux morilles, pousses de
pissenlit , Sole en Viennoise, petits pois a la Francaise and creme d'oignons nouveaux au lard.

New Look...
Veronique Valcke is responsible for the restaurant's chic new look. She envisioned the decor as a contemporary design inspired by the paintings of Hubert Roberts. The re-design strikes a perfect balance between modernity and the traditional, creating a whole new ambiance that perfeclty suits the balance in CHAIGNOT'S cuisine.

Faux carrera marble floor tiles from Diacasan Edition play against assorted whimsical drapes with polka dots from Pascale Gontier's studio, Louis XV style armchairs are handsomely covered in pony hair from the house of Leli?vre while the dining chairs shimmer with iridescent velvet from the house of JAB. The new plates by Bauscher Weiden, chosen for their purity and clean lines, perfectly showcase Amandine CHAIGNOT's culinary creations.
