Anticipated Bellvue WA Restaurant Opening Set For November

Bellevue, Wash. FOR IMMEDIATE RELEASE - The much anticipated restaurant opening of local Chef Dan Thiessen and business partner Matthew Bomberger will be November 24 beginning with lunch service. When 0/8 Seafood Grill and Twisted Cork Wine Bar opens its doors in the Hyatt Regency Bellevue, there will be several unique elements to meet the ever evolving needs of Eastside residents.
The 0/8 Seafood Grill and Twisted Cork Wine Bar, a $2.4 million remodel of a former restaurant space, will feature 7,600 square feet seating up to 300 guests. This duo concept, developed by Thiessen and Bomberger, combines two visions into a single element. That element will showcase regionally-inspired food with the finest of wine and spirits, dovetailing the two complimentary concepts within a single location.
Features of the restaurant include:
- A 310 square foot Champagne Lounge will showcase 20 by-the-glass selections of Champagne and sparkling wines.
- With a base menu of 20 appetizers, a range of sharable selections and a full compliment of main course seafood and meat offerings, meals will be in constant transition serving each diner's wish.
- Twisted Cork Wine Bar will serve as a platform for discovery with 50 wines available by-the-glass, all from within the 300 bottle cellar.
- Happy Hour will be featured nightly from 4 to 6 p.m. and from 10 p.m. to Midnight. Entertainment five nights a week.
- Weekly wine tastings and monthly wine dinners will punctuate Northwest offerings along with global selections.
0/8 Seafood Grill, serving Northwest flavors, and Twisted Cork Wine Bar, a spirited lounge, are located at 900 Bellevue Way, Suite 100, Bellevue, WA 98004.
