Artisanal Premium Cheese Offers Cheese Master Classes
Artisanal Premium Cheese is offering two courses for professionals entitled "The Cheese Master Class: cheese education for professionals."
The Cheese Master Class is an in-depth foundation course that will give you the tools:
to classify cheeses by milk type and cheese-making technique
to categorize and record the flavors and aromas of cheese
to understand a variety methods of affinage-the craft of aging the cheeses
to expertly pair cheeses with wines
to create and develop a restaurant cheese program
to assemble a dynamic cheese selection for retail sales
This program also places an emphasis on service and proper care of cheeses for the foodservice professional.
The Cheese Master class is led by industry expert Daphne Zepos and Maitre Fromager Max McCalman of Picholine Restaurant. Each of the course's sections includes a slide presentation, invigorating discussion, and thorough tasting and study of at least fifteen cheeses. An Artisanal Premium Cheese certification is awarded upon completion.
Course 1: The Four Week Series
The first of the two courses, intended for chefs and food industry professionals in the New York region, is a four-week series, offered Wednesdays, April 26, May 3, 10 & 17.
Course 2: The Intensive Class
The second course, designed for professionals outside of the New York region, is takes place Sunday, July 30, Monday, July 31 & Tuesday, August 1. It features a welcome dinner at Terrance Brennan's Artisanal Fromagerie & Bistro and includes breakfasts and lunches.
