Au Bon Pain Alums Roll Out New Fast Casual Concept

(February 5, 2013) After selling thousands of gozi flatbread sandwiches since its Grand Opening in December, Chef-Owner Thomas John of PIPERI (pronounced pip-AIR'-ee, the Greek word for peppercorns) is smiling. John is the former executive chef of Au Bon Pain, but before that, his career was distinctly oriented towards fine dining. He was named one of Food & Wine magazine's "Top 10 Best New Chefs in America 2001" for his groundbreaking cuisine at Boston's Mantra, and had previously spent years with the luxury Oberoi Hotel group in India. John and his partner, former Au Bon Pain CFO Tim Oliveri, introduced this all-new fast casual concept to Boston with a signature menu item called a gozi. Gozis are griddled flatbreads, a delicious variation on a type of Turkish bread. Diners can customize their gozis, choosing from a vast array of fresh, healthy toppings made on site daily. They range from humuus and falafel to Moroccan carrot salad and feta cheese, to marinated grilled chicken or beef. Gozis are a fast and inexpensive way to fuel local office workers, whose 2013 "lunch hour" is actually more like to 10 minutes. Takeout is the norm at PIPERI, but comfortable seating is available for those with an extra three minutes to spare. Online orders are accepted, and catering is also available. In fact, PIPERI recently delivered lunch to the dancers of The Boston Ballet.Meat lovers choose beef or chicken gozis for under $7, while vegetarians gravitate towards PIPERI's ethereally light falafel. Vegans ask for the economical mezze plates, and PIPERI's cheeses, greens, veggies and spicy sauces over rice or salad are perfect for the gluten-free.
