Traditionally, M
rzen is brewed in March and lagered in cool caves during the summer months, in order to be ready for the September and October beer festivals. Bavarians have been celebrating the arrival of fall with beer festivals since before the 1400s. The first Oktoberfest was part of a marriage celebration, when Bavaria's Crown Prince Ludwig commemorated his September wedding with a two-week festival. The festival quickly became an annual event that is still celebrated today.

Nestled in the pastoral countryside outside of Munich, Ayinger is a family-run concern headed by Franz Inselkammer, the sixth generation of his family to do so. Ayinger has been producing its beers in accordance with the German Reinheitsgebot, or German beer purity law, since 1878.

Most recently, Brauerei Aying completed work on its state-of-the-art brewery, which opened in 1999. Ayinger has been named the Top Rated Brewery in the World at the prestigious World Beer Championships. Additionally, Oktober Fest-M
rzen has received both platinum and gold medals at the WBC.
