Barbaresco Wine Dinner At Cinghiale

- Tony Foreman, owner and wine director, Cinghiale, will host a Barbaresco wine dinner at Cinghiale on Thursday, January 15th with special guest, winemaker Aldo Vacco. The multi-course wine dinner will take place at 7:00 PM and is available for $99 per person inclusive.

Barbaresco wines have very deep historical roots. The grapes have been cultivated in the hills of Barbaresco for centuries. They were most likely introduced to this region by the Romans as they moved north to conquer the region known as the land of "Italian Gaul".

Aldo Vacco's history with wine is also deeply rooted. The Produttori del Barbaresco winery was founded in 1958, the same year as his birth. Aldo's father, Celestino, was the son of one of the 19 farmers who joined together to found the Produttori. Aldo grew up with the Produttori del Barbaresco as a major part of his family life; not only was his father involved, but 4 of his uncles were also members of the cooperative. Aldo studied viticulture and graduated from Turin University in 1982. After his graduation he spent 6 months at UC Davis to master his knowledge of the English language and learn more about wine and vines in the new world. In 1986 he went to work at the Angelo Gaja Winery in Barbaresco, working side by side with Angelo Gaja. In 1991 he joined the Produttori del Barbaresco that by then, was selling its products all over the world. Aldo has worked side by side with Gianni Testa, winemaker at the Produttori since 1986, in shaping the wines of the Produttori.
