Bollinger Champagne Tasting Dinner At Cafi Boulud
Many neighborhood restaurants offer wine tasting dinners, but when the restaurant is Daniel Bouluds three-star Cafi Boulud, and the neighborhood is the Upper East Side, it comes as no surprise that the wines would be vintage Bollinger Champagnes. With the restaurants Chef de Cuisine Andrew Carmellini just nominated for the James Beard Foundations Best Chef in New York City award (the Oscars of the culinary world), Cafi Boulud has cause to celebrate and what better way than with some prized vintage Champagne. On Wednesday April 10th at Cafi BOULUD, Andrew Carmellini will prepare a five course wine tasting dinner pairing succulent Spring dishes with choice Bollinger Grande Annie vintage Champagnes.
Bollingers Grande Annee Prestige Vintages are always at least 95% grands and premiers crus and while the percentage of pinot noir varies from vintage to vintage, it is always the predominant grape, with the balance exclusively chardonnay. Grande Annie is never aged less than five years on its lees and is only produced in exceptional years when grapes reach a perfect balance of sugars and acidity and is therefore the expression of a single vintage, hence the denomination Grande Annie (great vintage). Sommelier Olivier Flosse has selected Bollinger Grande Annie 92 to serve with a light Lobster Bisque, Crisped Lobster Roe and Tarragon Cream. Grande Annie 95 will accompany Roasted Halibut with Smoked Salmon and Champagne Sauce. Bollingers RD, Extra Brut is only disgorged to fill specific orders; the 1990 will be poured with Tartine de Pigeon, Mbche Salad, Truffle Vinaigrette and Foie Gras Sauce. For dessert Raspberry-MangoChampagne Terrine with Almond Sabli and Pink Guava Sorbet will be highlighted by Grande Annie Rosi 95.
The five course dinner with five wine parings is $245 per person, tax and gratuity additional.
