Boston-area Bistro Owner Educates Diners On The Surprise Of Summer Seafood
Paul Petersiel, owner of Red Rock, a beachside bistro just north of Boston, is an unabashed wine enthusiast whose restaurant wine list boasts close to 200 eclectic listings, including many hard-to-find zinfandels.
Petersiel believes that, depending on the weight and nose of the wine, certain zinfandels marry nicely with summertime fare from the ocean. Here are Pauls top choices for warm weather sipping -- and supping -- from the bistros new menu.
* Pan-Roasted Lobster in Corn Silk Broth with buttery potato cake ($29)

* Paella with House-Made Duck Sausage, clams, mussels and shrimp ($22)
* Grilled Sushi-Grade Tuna over buckwheat soba noodle w/ curried coconut broth ($24)
