C. H. E. F. S. Host Foie Gras " Battle " At 4 L. A. Prominent Restaurants May 14

Melisse, The Royce, Lemon Moon and Animal Join the Fight for Foie Gras to Support Sustainable Farming Practices and "The Whole Duck"

WHAT:
On Monday, May 14, 2012, C.H.E.F.S., the Coalition for Humane and Ethical Farming Standards, along with Los Angeles' leading restaurants: Melisse, The Royce at The Langham, Lemon Moon and Animal, will simultaneously host a six-course prix fixe dinner ($200 per person, $150 per person for Lemon Moon only, inclusive of tax and gratuity) to support sustainable farming practices and "the whole duck." The battle for foie gras will feature esteemed chefs from Northern and Southern California at each of the participating restaurants working side-by-side:

- Melisse - Josiah Citrin (Melisse), Brendan Collins (Waterloo and City), Raphael Lunetta (Jiraffe), Hiro and Lissa (Terra in Napa Valley and Ame in San Francisco), Mark Dommen (One Market in San Francisco) and Justin Wangler (Kendall Jackson in Sonoma)
- The Royce at The Langham - David Feau (The Royce at The Langham), Michael Cimarusti (Providence), Micah Wexler (Mezze), Doug Kean (Cyrus in Sonoma), Victor Scargle (Lucy at Bardessono in Napa Valley) and Peter Armellino (Plumed Horse in Saratoga)
- Lemon Moon - Tony Esnault (Patina), Octavio Becerra, Joey Elentario (Chez TJ in Mountain View), Marc Zimmerman (Alexander's Steakhouse in San Francisco) and Dustin Valette (Charlie Palmer's Dry Kitchen in Healdsburg)
- Animal - Vinny Dotolo (Animal), Ludo Lefebvre (LudoBites), Michael Voltaggio (INK) and Roland Passot (La Folie in San Francisco)

The indulgent tasting menu will provide guests with an opportunity to enjoy special preparations of foie gras such as Foie Gras Tortellini with Game Jus and Forest Mushrooms and Fennel; Foie Gras Saute with Grilled and Partially Dehydrated Strawberries; and Santa Barbara Spot Prawn with Cured and Poached Foie Gras, Fava Beans and Nasturtium. All of the proceeds from the dinner will benefit The Coalition for Humane and Ethical Farming Standards (C.H.E.F.S.).
