C'est Si Bon! Cooks Up Seasonable Feasts For Spring
C'est Si Bon!, a cooking school located in Chapel Hill, North Carolina, is pleased to announce its upcoming Spring Seasonable Feasts small group cooking classes.
Join Owner and Chef, Dorette Snover, on Saturday, April 8 at 7:00 p.m. as she unveils a superbly enclosed Provengale-style dining porch and guides you through preparing "Carolina Coastal Beauties." The menu will consist of: Cajun peppered soft shell crabs with lime aioli hunched over mizuna and heirloom lettuces; asparagus tris simple; chipotle black-eye pea and a cool watermelon pickle slaw; and strawberries frangaise.
On Saturday, May 6 at 7:00 p.m., you'll be transported to the "Hills of Chianti - Cibo Buono!" With support from Chef Dorette, you will prepare the following menu: antipasti of crostini misti (finocchiona); pinzimonio, a tuscan crudite; panzanella, the famous salad; frittata con zucchini (collect the eggs and chop the zucchini!); orecchiette con pomodori e pancetta, a spicy (or not!) pasta with local ossabaw bacon; fragole con vin rosso e zuccero (strawberries with red wine and sugar); and pecorino con miele e tartufi (soft pecorino with truffle honey).
C'est Si Bon! is devoted to teaching technique rather than recipes. Chef Dorette believes passionately in cooking by the senses rather than strictly by the book. She says, "Spring and soft shell crabs, images of the wide soft hills of Tuscany and the season's first and sassiest panzanella; that's some of what we're about. But being with you in the kitchen and creating these feasts, well, that ingredient is irreplaceable. It's divine. Won't you join us in this sybaritic revelry for spring? "
