A Charleston Cookie Secret Revealed: Heavenly Eggs
Until now, the Charleston Cookie Co. has kept its recipes carefully cloaked in secrecy. Its uniquely Southern secret ingredient still is not being revealed, but founder Judith Moore says there is another reason for the success of her cookies: the use of heavenly eggs produced at Mepkin Abbey in Moncks Corner, SC.
"In my quest for the finest ingredients for our cookies, I sought out eggs that were as fresh as could be found. A friend told me that the freshest eggs are only from Mepkin Abbey," says Moore. "When I used the Mepkin eggs they made the large-batch formula taste exactly like the recipe I made at home! Mepkin's eggs are produced in an environment of serenity, devotion, and peace "perfect for cookies dedicated to bringing a bit of joy to people's lives."
Mepkin Abbey, www.mepkinabbey.org, is located in Moncks Corner, SC near Charleston. Monks there belong to the Order of Cistercians of the Strict Observance, or more commonly, Trappists. The name "Mepkin" is a Native American word that means serene and lovely.
Charleston Cookie Co. LLC was founded in 2003 with the introduction of a uniquely Southern chocolate chip pecan cookie. The company's signature chocolate chip cookie - as well as all its other cookies - is made with a secret Southern ingredient known only to the CEO and founder, Judith Moore.
