Chef Anthony Lamas Brings Nuevo Latino Cuisine Back To Louisville
Louisville's well-known Chef Anthony Lamas has opened his new venture, Seviche - A Latin Restaurant. Seviche opened on June 27 at 1538 Bardstown Road, which is the location of the former Jicama Grill.
Seviche's menu offers innovative Nuevo-Latino cuisine, with the heart of the menu focusing around a style of Peruvian cooking known as seviche, which is seafood that is "cooked" using citrus juices. Lamas has been credited for introducing seviche to Louisville and explains that this new venture gives him the opportunity to bring more exotic flavors to the Louisville dining scene.
With its new eye-catching avocado green exterior, and warm vibrant South American inspired interior, the location has undergone major renovations to transform the restaurant into the fresh Bardstown Road eatery. Chef Lamas created a lounge area with leather couches and a flat screen television and removed booth seating that was along the back wall to create a more open feel and addition space for tables.
Lamas also utilized a variety of different textures to create an authentic coastal-Latin feel through out the restaurant. From earth-tone stucco walls to stone inlet around the bar area, the design is representative of a true South American eatery.
"Latin cuisine offers such a variety of bold flavors, colors and textures. Seviche's menu reflects that flair, and I wanted the ambiance and design of the restaurant to match," said Lamas. "I'm excited about introducing fresh Peruvian inspired influences to Louisville, and am looking forward to the feedback from my guests."
In addition to new items, Lamas' signature dishes including Churrascos de Argentina, Macadamia Crusted Sea Bass and of course wide variety of seviches, will be offered on the menu. Seviche will be open for lunch Monday through Friday from 11 a.m. to 2 p.m. and dinner will be served Monday through Thursday from 5 to 10 p.m., Friday and Saturday from 5 to 11 p.m. and Sunday from 5 to 9 p.m.
Prior to opening Seviche, Lamas was co-owner and chef of Jicama Grill for over 4 years, taking the restaurant to great success both locally and beyond the Bluegrass. Recognized by the James Beard Foundation as a Rising Star of American Cuisine, Lamas has put his culinary skills on display at the James Beard house on several occasions. Lamas has also appeared on the Food Network's "Sara's Secrets", sharing his recipes with viewers across the nation.
