Chef Davide Rossi Joins Birroteca

Baltimore, MD - Robbin Haas, owner of Birroteca, is proud to announce the new hiring of Davide Rossi as chef. Davide Rossi is a graduate of C.A.P.A.C. Institute in Milan, Italy and has worked at some of the top establishments across Italy, the Caribbean and the United States. Most recently he was the chef/owner of Pazza Luna in Baltimore. He now brings his authentic Italian culinary expertise to Birroteca.

"Respect for ingredient and simple classic cooking is what attracted me to Birroteca," said Rossi. "Robbin has created a great environment and I am excited to lead such a talented and focused kitchen staff."

He started working at Sotto Sopra and before moving on to Boccaccio. Davide moved home to Milan, Italy to take over as executive chef at the Indiana Post American Steakhouse. Dearly missing the United States, he decided to open Ports of Italy in Booth Bay Harbor, Maine. After finding success at Ports of Italy he then purchased Pazza Luna in Locust Point. After selling Pazza Luna, Chef Rossi took on a consulting roll and assisted in the opening of The Mallet in Bel Air.

"Davide brings his classical and authentic background while still having a modern take on Italian cooking," says Robbin Haas.

Birroteca is the destination for artisan pizza, craft beer, and wine in Baltimore. Birroteca is the latest creation by Robbin Haas, one of the top 10 chefs in America as recognized by Food & Wine magazine. The "beer" in Birroteca consists of 24 craft beers on tap and more than 20 bottled beers. The focus is on local breweries from Union Craft Brewery (located right in Birroteca's Hampden neighborhood), Evolution, Heavy Seas, Flying Dog, and DuClaw.
