Chef De Cuisine Caitlin Mateo Announces Late Fall/winter Menu At Square 1682
Philadelphia, PA - Chef de Cuisine Caitlin Mateo steps up into her newly promoted role-while Chef Guilllermo Tellez now heads both Kimpton restaurants in Philadelphia-releasing her first menu at Square 1682, with fun and flavorful combinations, local and seasonal ingredients.
The new menu centers on "elegant," yet "unprententious," dishes full of "robust and profound fall and winter flavors," Mateo says, in her menu organized into Small Bites, Main Courses and Accompaniments, all with seasonal flair.
Her Small Bites highlights include a simple and standout Kale Caesar Salad with grana padano, toasted focaccia, preserved lemon; Winter Beef Ragu, handmade gnocchi, braised shortribs, wild mushrooms; and a Scottish Egg - a U.K. classic - made with chicken sausage, Lancaster cheddar, whole grain mustard.
Notable and autumnal Main Courses include a vegetarian-friendly Roasted Acorn Squash with Du Puy lentils, white beech mushrooms, piri piri; an exceptional Braised Veal Osso Buco, served along tellegio polenta, winter vegetables and a sherry wine reduction; Pan Roasted Shrimp with ancho chili romesco, handmade spinach fettuccini, soubise.
"Beautiful produce is a key element along with strong fall flavors on this menu. In our dessert menu, for instance, we use locally sourced apples, pears, and figs. One of my favorites on the dessert menu is our ginger trifle, it's backed with fall flavors and the spiced cake is delish," Mateo says.
Recommended desserts on the new "Sweet Endings" menu include Warm White Chocolate Bread Pudding with Valhrona chocolate sauce, s'mores gelato; Pumpkin Cheesecake with figs, cardamom gelato and house whipped cream; Ginger Trifle with spiced ginger cake, caramelized apples, cranberries, fresh whipped cream. Additionally, guests will enjoy ending their meals with a well-crafted cheese plate and house-made ice creams, sorbets and gelatos. An accomplished selection of dessert wines, ports and sherries are also available from the "Sweet Endings" menu.
