Chef Jim Coleman Featured At "the New Fiber Story" Conference



Chef Jim Coleman, TV, radio and newspaper cooking personality, and corporate chef at the historical Normandy Farm in Philadelphia which includes the Coleman Restaurant, prepared items made with natural resistant starch, a type of dietary fiber, at a conference entitled "The New Fiber Story: Natural Resistant Starch." At the conference, organized by Oldways and Hi-maize� Resistant Starch in Philadelphia on September 29, Chef Coleman demonstrated recipes including flour tortillas and raspberry cream cheese cakes that replace regular flour with Hi-maize giving them a significant fiber-boost.
