Cocinar Mexicano to Offer Chefs Certificate Program with Mexico's Top Culinary School

Cocinar Mexicano is pleased to announce the launch of its professional certificate program, which will run from October 24-29th, 2008, in conjunction with Centro Culinario Ambros�a, Mexico's country's leading culinary institute. The four-day, five-nights hands-on intensive is based in Mexico City, where participants will attend classes in Ambros�a's state-of-the-art kitchens. In addition to classes with Chef Abdiel Cervantes and his colleagues, workshop members will have access to the most exciting names in contemporary Mexican cuisine through our program of curated dining. Featured restaurants for the inaugural session include Aguila y Sol, Pujol, Paxia and Izote, whose award-winning chef/owners will be available to answer questions and host an insider's tour of their kitchens.

The curriculum for the workshop, drawn from Ambros�a's six-month degree program in Mexican cuisine,
covers cooking with chiles, flowers and Mexican spices, regional specialties, Mexican fusion cuisine, traditional desserts and chocolate making and a unit on wine, tequila and mescal.

With a day trip to the legendary village of Tepoztl�n to explore the Sunday outdoor market and cook with local women (our "Life of Corn" curriculum features Mexico's famed antojitos, as well as a unit on tamales), our Chefs Certificate program combines the best of urban and rural, sophisticated and traditional. Participants will not only earn a certificate from Ambros�a attesting to their completion of the course; they will gain unique experience and insight into the techniques and pre-Hispanic roots of a cuisine increasingly seen as part of the world's great culinary heritage.


Format

Participants arrive in Mexico City on a Friday afternoon, and immediately plunge into the culinary life of the city and of Mexico itself, with a welcome dinner at one of our affiliated restaurants. Accommodation for the five nights, all meals, materials, airport transfers, ground transportation and tuition are included in the workshop price of US $2495. Departure is the morning of October 29th, following breakfast in Mexico City.


Day of the Dead + Chefs Certificate Package

Participants in our Chefs Certificate program may choose to stay on for Cocinar Mexicano's six-day Day of the Dead workshop in Tepoztl�n (October 28-November 3rd) and enjoy a 10% discount on the combined price. This is an excellent option for those who wish to experience Mexico's unique celebration, in which the dead are believed to rejoin the living for a week of traditional food and magical processions.
