The Copper Beech Inn Receives Four Diamond Award

August 6, 2007 --- ESSEX, CT --- The Copper Beech Inn, selected as one of the "Top 100 Hotel Restaurants in America" by USA Today and Zagat, today announced it has received the coveted
AAA Four Diamond award for its restaurants, Brasserie Pip and The Ivoryton Room.

One of only seven restaurants statewide to receive this prestigious award, The Copper Beech Inn has received this honor for 10 consecutive years. The Inn's menus, created by Executive Chef Francois de Melogue, feature high quality, locally-raised ingredients, and balanced flavors to help create a memorable dining experience. Maitre d'Hotel Christopher S. Sperling lends a watchful eye over the dining room and manages the Inn's 500-bottle selection wine list and creative cocktail offerings.

Inspired by his 1800-title cookbook collection, Chef de Melogue directs the kitchen for both The Ivoryton Room as well as Brasserie Pip, a casual, classic French brasserie. (Prior to joining the Inn's team, training at the New England Culinary Institute led Chef de Melogue to positions at The Old Drover's Inn, a Relais & Chateaux property, and Pili-Pili in Chicago named by Food & Wine magazine in 2003 as "one of the Top Ten New Restaurant Openings in the World."

On the Inn's Provencal-inspired summer menus look for Dover Sole Grenobloise, Cabillaud Mistral-baked codfish with heirloom tomatoes and Parisian mushrooms, Summertime Lobster with a Ginger-Chive Nage, and Point Judith Scallop Seviche.

Named by the readers of Connecticut Magazine as the Best Country Inn in Connecticut for three consecutive years and the recipient of the 2007 Wine Spectator Best of Award of Excellence, The Copper Beech Inn combines turn-of-the-century charm with luxurious modern conveniences.
