Desmond's Restaurant Appoints Chef De Cuisine Todd Sabatini
) East Wind (5720 Route 25A,Wading River, NY 11792 [631] 929 6585 or www.eastwindlongisland.com) announces the appointment of Todd Sabatini as Chef de Cuisine of Desmond's Restaurant.
Sabatini comes from a family of chefs. Eight generations cooked for the kings of Egypt and his great grandfather, Nicolia, cooked for the royalty of Russia, Spain and Italy before immigrating to America to cook for this country's great and good. The Long Island native from Middle Island was thus inspired to study the culinary arts and did so at The New York Institute of Technology. His first steps in a professional kitchen, in 1996, were at Tierra Mar Restaurant in Westhampton, under the guidance of celebrated chef owner Todd Jacobs who Sabatini worked with for over ten years. Most recently, Sabatini was sous chef overseeing all of Jacobs' operations including the fine dining restaurant Tierra Mar, the boutique organic caf� Solly Browns and the ocean-front ballroom Atlantica. Over the years Sabatini also did stints at Long Island's top-Zagat rated Tellers Chophouse in Islip, as kitchen general manager, and the fine-dining Northern Italian restaurant Colucci's in Mt. Sinai as executive chef.
Today, Sabatini applies all of these experiences to cook with old-fashioned standards and modern know-how as Chef de Cuisine of Desmond's Restaurant & Lounge at East Wind. He uses fresh and seasonal Long Island bounty whenever possible and values North Fork wines for his reductions and demi-glaces. His additions to the Desmond's menu are Tuscan rib-eye with sun dried tomatoes & black olives with garlic mascarpone cream; grilled chicken & wild mushroom linguini with baby spinach, tomatoes and roasted garlic in a light Sauvignon Blanc sauce; prosciutto-wrapped shrimp with grilled Tuscan bread with lemon caper beurre blanc and snipped chives; and a seafood medley of lobster, shrimp, scallops, mussels and clams with garlic cream sauce. In addition to finding the Sabatini touch on the menu at Desmond's, here is where Sabatini follows in the footsteps of his grandfathers as a chef to the great and the good on the East End of Long Island, New York.
