PHILADELPHIA, PA-Kevin Sbraga, Owner and Executive Chef, partners with Rafael Dingui, Owner and Director of Operations, to form Evolucion Private Dining.

Sbraga's food is Redefining American Cuisine. Tried and true flavor combination presented in new and innovative ways. He creates his distinctive menus using the freshest and finest seasonal and regional ingredients. His cuisine is a combination of global influence, American product, and European technique.
Chef Sbraga was most recently the chef de cuisine of The Grill at the Ritz-Carlton Philadelphia. Sbraga has held top chef positions for Georges Perrier and Stephen Starr. Prior to relocating to the Philadelphia area Sbraga powered his way through the kitchens of Pano Karotassos of the Buckhead Life Restaurant Group in Atlanta, Guenter Seeger formerly of Seeger's in Atlanta, Joel Antunes eponymous restaurant Joel also in Atlanta, Arnaud Berthelier formerly of the Dining Room of The Ritz-Carlton Naples, and Dominique Michou of L'Alban Chambon in The Hotel Metropole in Brussels, Belgium.
Kevin is also alum of Johnson & Wales University. Prior to college Kevin graduated from Burlington County Institute of Technology in Westampton, New Jersey. Sbraga now helps with the culinary program at his former high school.
Director of Operation, Rafael Dingui, and Sbraga have been acquaintances for over 12 years. Rafael was previously an owner of a casual dining restaurant located in Cherry Hill, New Jersey before creating Evolucion with Sbraga. "Mr. Dingui is relentless when is comes to the details of dining" says Sbraga. From the initial guest contact, to the wine pairings, execution of flawless service, to the uncompromising levels of cleanliness when it comes to the clean up, Rafael oversees all.
