Executive Chef Michael Lund Joins Stratford University

Executive Chef Michael Lund has joined the Culinary Arts Program at Stratford University as an Adjunct Instructor. Currently, he is teaching culinary classes at the Woodbridge Campus, but in the near future he will be teaching at Stratford University's new Richmond (Glen Allen) campus. Chef Lund's area of expertise lies in the farm to table, or local cuisine, movement. As such, he will be teaching culinary students the importance and nuances of using locally grown and raised ingredients to prepare world class dishes.

"To introduce Culinary Students to the Farm to Table movement so early in their careers" he explains, "is an amazing opportunity and something I am incredibly passionate about."

Chef Lund comes to Stratford University with an impressive resume. Currently, he serves as the Executive Chef at Zynodoa Restaurant, located in downtown Staunton, Va. The restaurant focuses on sophisticated dishes using ingredients sourced from local producers. Prior to joining Zynodoa, he spent six years in the Kitchen at the Mobil Five Star & AAA Five Diamond Inn at Little Washington, recently ranked number one by "Travel & Leisure Magazine." Under the direction of Chef Patrick O'Connell, a five-time James Beard Foundation Award recipient and "Chef of the Year", Chef Lund rose to the position of Executive Sous Chef.

"I am passionate about good food, especially when it comes to using local and seasonal ingredients," adds Chef Lund. "If I get culinary students to feel the same, I will be pleased."

Stratford University offers a variety of degree and non-degree culinary arts, baking and pastry, and hospitality courses.
