First Chef From New Mexico Chosen to Compete at Far West Best Young Chef Competition

Santa Fe, NM (March 10, 2015) Arroyo Vino Restaurant is pleased to announce that Chef Colin Shane has been nominated and successfully selected to represent New Mexico at the Chaîne des Rôtisseurs “Best Young Chef Competition” held at the Art Institute of California, San Diego, March 14, 2015.
Shane an up and coming young chef began his culinary journey after a successful music career took him all over the world, where he was exposed to many different cuisines. Due to a powerful passion for food, he took a new course in life rising as a commis for Bert Gill at Mildred’s Big City Food in Gainesville, Florida. Later he sharpened his skills at Restaurant Martín in Santa Fe, under Chef Martín Rios, a multiple James Beard Award semi-finalist. From there Shane honed his talent and skills under Chef Mark Connell. Most recently he studied under Chef Michael Tusk of the famed San Francisco 2 star Michelin restaurant, Quince. His desire to re-invent Santa Fe dining is bringing a new evolution to the award-winning restaurant at Arroyo Vino, and we invite everyone to experience Santa Fe’s newest chef.

The Chaîne des Rôtisseurs is the world’s oldest international gastronomic society, founded in Paris in 1248. Each year the society sponsors young chef and sommelier competitions that attract contestants from throughout the world, while the Chaîne Foundation provides scholarships for students in these fields. Chaîne is based on the traditions and practices of the old French royal guild of meat roasters. Revived in 1950, the society has professional and amateur members in more than 90 countries worldwide. In the United States, there are nearly 130 bailliages (chapters), each offering a variety of culinary activities to suit the interests of local members.

A Review from Fodor’s: “It's worth making the 15-minute trek out to Santa Fe's western mesa to dine at this outstanding bistro–cum–wine shop that's quickly developed a devout following among locals. At the store, stock up on often hard-to-find vintages from all over the world—for a $20 corkage fee, you can also enjoy your new Bordeaux or Albariño in the airy dining room, where tables are set around a central wine bar and the night's specials are handwritten on a chalkboard.”
