Former NJPAC Executive Chef Adam Rose Launches Villalobos

Adam Rose, most recently Executive Chef at the New Jersey Performing Arts Center in Newark and instrumental in launching Restaurant Passioné in Montclair and New York Times “Excellent”-rated Bin 14 Trattoria & Wine Bar in Hoboken, returns to Montclair, NJ as Chef/Owner of Villalobos (6 South Fullerton Avenue).

Bold commissioned paintings and graffiti by local artists pop off walls at 50-seat BYO just steps from bustling Church Street. From an open kitchen, Rose creates traditional Mexican dishes executed with a modern technique using ingredients sourced from 180-mile radius whenever possible, tortillas made in-house daily using organic masa and chilis imported from Mexican markets which inspired Villalobos (a surname which translates to "town of wolves").

FALL MENU HIGHLIGHTS
Apps ($10 to $13): guacamole with smoked tomatillo, sea urchin; corn off the cob, crema, cotija, morita; lamb neck, black beans, butternut squash. Tacos ($4 or $5): beef tongue, chipotle, pistachio; cola braised pork belly, corn, cotija, ancho; grilled octopus, avocado, fresno, radish greens. Mains ($26-$29): beef short ribs cooked in tomatoes with achiote paste & chilies; braised rabbit in Oaxacan green mole; grilled brook trout, baby leeks, potatoes, vinegar. Desserts: Churros with melted chocolate and cinnamon. Drinks: Housemade agua frescas, Mexican sodas, slushies.
