Fresh Nantucket Scallops At 1789 Restaurant

Nantucket bay scallops are coming to Washington this November and will remain a fixture on 1789 Restaurant's menu until their season closes in January . These treasured scallops, approximately an inch in diameter, renowned for their sweetness and tenderness, thrive in the Island's clean coastal lower waters rich with seagrass. Executive Chef Ris Lacoste is delighted to have a box delivered to her restaurant door every other day during season to share with her guests. To gloriously honor these sea jewels, she is presenting a five-course scallop tasting menu priced at $65 per person and at $105 paired with wines

At the age of 10 Ris Lacoste began working at the annual sea scallop festival in her birthplace of New Bedford, Mass. Her introduction to the more precious and smaller bay scallops came about many years later at 21 Federal Restaurant in Nantucket. Thanks to David Glidden of Glidden Island Seafood, Chef Lacoste now offers these delicacies on her menu for Washingtonians to savor.
