Anyone who has lived on the East Coast long enough knows that humidity is at an all-time high this time of year. Turning on a hot oven is usually the last thing you want to do when your air conditioner is on full blast. We have the perfect light solution to feed you on these hot summer days and nights-Gazpacho, which is low in calories and packed with delicious flavor.
First off, grab your bags and get yourself to the local farmer's market where it's the peak time for summer's best fruits, vegetables, and herbs. Once you've gathered your goodies, head home or come to the Ger-Nis Culinary & Herb Center to create traditional and modern versions of this Spanish soup.
In this class, you will not only learn recipes for Gazpacho, you will explore the ancient history of Gazpacho tracing back to the Moors arriving in Spain and the Andalusian region specifically. Gazpacho was said to have started out as a soup of bread, garlic, olive oil, and water. Soon vinegar was added. Finally tomatoes and cucumbers were added to create what we today know as traditional Gazpacho.
The Gazpacho basics will be covered in this class; among them using a mortar and pestle in order to capture the perfect consistency. We will also explore modern versions of this classic using fresh melons and juicy mangos. This class is sure to be RIPE with excitement.
