AT CAREERS THROUGH CULINARY ARTS PROGRAM

BENEFIT 2005 -- A PREVIEW OF SPRING DINING

On Monday, February 28, 2005, join some of New York City's hottest new restaurants and old favorites when Careers through Culinary Arts Program (C-CAP) presents the 7th annual A Preview of Spring Dining. This year, 38 of New York City's top-rated restaurants will present a grand tasting of savories and sweets from the Chefs' new spring menus, while sipping wines from the Robert Mondavi Family of Wines and champagne from Gosset. The evening's festivities will also include a silent auction with over 30 items to bid on including once-in-a-lifetime culinary and travel packages.

The Benefit has become one of New York's premiere tasting events. Local
residents, local businesses and national organizations support A Preview of
Spring Dining year after year.

All proceeds raised from the event and silent auction will support C-CAP's programs and services.

2003 James Beard Foundation Best Chef in New York City Marcus Samuelsson of Aquavit and Riingo Restaurants, is this year's Chef Committee Chair. Deborah and Rick Smilow are Chairs for the event. Mr. Smilow is President and CEO of The Institute of Culinary Education (ICE).

The Benefit will feature 38 restaurants including Aquavit, Daniel, Gotham Bar & Grill, Gramercy Tavern, Nobu, Olives and Union Square Cafi. The 2004 event raised $500,000 from the ticket sales and silent auction.

This year's event features C-CAP Graduate Chefs Amar Santana, Sous Chef at Aureole, Rachel Lansang, Pastry Chef at Aureole, and Alfred Stephens, Executive Pastry Chef at Olives NY. More than 60 New York City high school students are expected to assist chefs at the event.

As this year's honoree, Charlie Palmer will receive the C-CAP Honors Award, an original stainless steel sculpture created by Philip Grausman.
