Hot Cakes Molten Chocolate Cakery : Boozy Milkshakes And Cocktails Now In Full Swing

Ah, the lazy days of summer! Not at Hot Cakes Molten Chocolate Cakery in Ballard! Autumn Martin and her team have been busy creating a selection of boozy milkshakes and cocktails worthy of the "OH WOW" stamp that her Hot Cakes' products are known for, and oh wow, have they succeeded!

Like everything at Hot Cakes, these milkshake and cocktails are each made to order with the finest ingredients and love. All of the milkshakes, boozy or otherwise, are made using Bluebird hand-made vanilla ice cream and new flavor combinations are ever evolving. Favorite boozy milkshakes of the moment include: Extra-Dark Salted Caramel with Espresso and Rye Whiskey garnished with vanilla sugar; Mezcal with Lime and Salted Caramel garnished with lime salt and sugar; Tequila with Fresh Jalapeno; and Smoked Chocolate Ganache, Laphroiag, and Malt garnished with a chocolate covered espresso bean. Boozy milkshakes are $10 and milkshakes for the under 21 crowd run $6.50 to $7.50.

Boasting the smallest bar in the city, we're talking two bar stools; Martin is keeping things simple with a small section of bottles perfect for sipping. Think: Dolin Rouge, Chocchi Barolo Chinato, Kopke 10 Year Port, Willett Bourbon, Templeton Rye, and Zaya Rum. A thoughtful selection of wine is also available.

To help with creating Hot Cakes cocktails, Martin brought in Anna Wallace of Walrus and the Carpenter fame to consult and come up with drinks that complement the array of desserts perfectly.

The cocktail menu is as follows:

Rhubarbarella: Zucca, Lemon, and House-made Rhubarb Jam ($9)

Smoked Old Fashioned: Old Overholdt Rye, Laphroaig 10 Year, Chocolate Bitters, and Orange Twist ($9)

Saturn Whistle: Jameson's Irish Whiskey, Aperol, Strawberry, Lime, and Orange Bitters ($9)

Root Ramble: Voyager Gin, Creme de Mure, house-made Burdock-Dandelion Root Syrup, and Lemon ($9)

Chocolate Hanky Panky: Bourbon, house-made Chocolate Syrup, Soda Water, and Chocolate Bitters ($9)

The Hot Cakes savory menu items are slowly rolling out and new additions include: Grilled Cheese with Gruyere and Beecher's Aged Flagship; Grilled Cheese with sauteed Dates, Big Boy Blue Cheese, and Prosciutto; Chicken Salad on a fresh Butter-Cream Biscuit; and a Charcuterie plate.

Opened in May of 2012 by Autumn Martin, Hot Cakes Molten Chocolate Cakery, is a one-of-a-kind dessert shop located in Seattle's historic Ballard neighborhood. The dessert shop, a hybrid between classic soda fountain and dessert cafe, offers made-to-order high quality, innovative, and organic comfort desserts and confections, plus savory treats, boozy milkshakes, and cocktails. Hot Cakes Confections was founded in 2008 by chocolatier Autumn Martin. Ms. Martin's original Hot Cakes creation, a take-and-bake molten chocolate cake in a mason jar, plus a line of organic salted caramel sauces, are available at select specialty stores and markets in the Seattle area.
