A native of Washington, Caprial was raised in Portland. John is a product of New Jersey. The two met while they were students together at the prestigious Culinary Institute of America (the other CIA) in Hyde Park, New York. They married in 1984 and headed west to begin their careers. The two honed their skills by applying their craft in some of the most popular destinations in the Northwest. Soon, Caprial's cooking caught the eye and taste buds of Time Magazine, which heralded her in 1988 as "the latest star in town - she turns out dishes that are as delicious as they are pretty." She also received the James Beard Award for Best Chef, Pacific Northwest 1990, the first year the distinguished award was given. The honor solidified Caprial's ranking as a master chef. In the meantime, John was busy sharpening his business acumen as well as his own cooking skills - and his natural business talents ultimately led the pair to open their own restaurant. Caprial and John opened Caprial's Bistro in 1992 as a cozy 26-seat restaurant. Six years later, a major remodeling transformed the Bistro into a 60-seat restaurant with an open kitchen, a full bar, and a private dining room perfect for special events and intimate cooking classes. From its simple origins in 1992, John masterminded the Bistro's development into a thriving business with a loyal customer base that continues to grow. The modest staff has grown from eight to 50 employees. The restaurant's cooking school teaches over 200 classes per year with a program that plays host to local and national guest chefs as well as offers a permanent teaching venue to
