Icon New York's fall menu welcomes the cool season with fall ingredients but captures summer seasonal ingredients to offer an Indian Summer Menu
New York - September 10, 2007 - Chef Michael Wurster launches his fall menu at Icon New York at W New York - The Court, creating an Indian summer within the selections of the menu. Injecting ripe summer produce and flavors paired with distinct fall flavors, roots and seasonings, the menu infuses Chef Wurster's belief of simple tradition married with his reinterpretation of modern, forward thought American cuisine.
Dishes created to heighten the simplicity of the seasonal ingredients such as tomatoes, squash, micro greens and vegetables from local suppliers, when possible, are key elements to the composition of the menu. The Heirloom Tomato Tasting "3 Ways," serves tomatoes as "caviar," "the pillow" and sliced dressed with micro basils and as Chef Wurster believes "heightening the simplest of ingredients such as tomatoes and redefining the typical presentation allows for ingredients to be looked at with alternative possibilities."
Seeking fresh and salt water for inspirational ingredients, the menu includes the flavorful and visually delicious Maine Sea Scallops "Black and White" layered with black winter truffles, served with braised artichoke ravioli, chipolini onions, arugula puree and Foie Gras emulsion, celebrating the fall season. Embodying the Indian summer cuisine is The Butter Poached Lobster preserves with summer flavors but diversified with the preparation of the Hubbard Squash, a traditional fall flavor and contrast.
Chef Wurster's version of "Bacon and Eggs," a timeless, season defying dish, is reinvented with a humorous nod, served as Pork Belly with warm layers of yolk-infused sabayon, porcini mushrooms and asparagus. "I love the flavor of bacon and eggs and the tradition of this dish typically being a breakfast classic," says Wurster. "This dish is the grown-up, reinvented version of the classic."
Icon New York's fall menu is completed with the compliments of an extensive wine list featuring select varietals and vineyards. Guests may also enjoy an extensive seasonal cocktail menu featuring fresh juices and creative garnishes. The experience is completed with a delectable dessert menu featuring Chef Wurster's Deconstruction Snickers, Black and White Chocolates and a nod to Berries with eight different preparations.
Icon New York offers an intimate, chic, modern dining room. A handsome bar is available for a pre-dinner cocktail of after dinner aperitif. The main dining room seats 95 and the glass-enclosed skylight room, adjacent to the Patio, seats 25. The Patio is available for al fresco dining and cocktails during seasonal months.
