The new, chic place to unwind after a long day is the Rum Lounge at the Resort at Singer Island, which boasts an exotic selection of cocktails and bites in a sophisticated and stylish setting. The Rum Lounge is an oasis of ultra-cool, located Oceanside on Singer Island, North Palm Beach County, a special place for the beautiful and hip who are looking for serious cocktails to fuel their fun.
With live, South Beach style music on Thursday and Friday nights (Saturday will be added soon), the Rum Lounge specialty libations include the Pineapple and Mint Caipirinha ($10) -a delightful blend of Appleton Estate VX Rum, lime and sugar, the Solutini, a concoction of Hyponotiq Liquor, Blue Curacao, Level Vodka, Triple Sec and white cranberry juice and the acclaimed Lyceetini and Asian Peartinis (all $12). The Rum Lounge also features a wide array of island favorites including the Caribbean, the Sunset, the Emerald and the classic Mai-Tai ($10).
Feeling a little famished? Satisfy your hunger with a few Solu Bites. Created by executive chef Carlos Jorge, known for his consistent, modern culinary style, signature menu selections include the Ahi Tuna Tartare prepared with sambal, wasabi-avocado paint and crispy lotus root chips ($16) or the Vietnamese Lollypop Lamb Chops made with jicama apple slaw, edamame and mint coulis ($17).
The design of the Rum Lounge compliments its bold and exciting menu. A teak floor is inlaid in an endless vertical pattern and 'sails' of arched wood are bent upward toward the high ceilings, reminding arriving guests of entering a yacht, and whimsical blown- glass light fixtures reminiscent of a sea urchin echo the nautical motif. A large abstract drawing by renowned artist Dale Chihuly anchors the space.
The bar is adjacent to Solu restaurant, an Asian-infused Caribbean Grill that celebrates the cuisine of the sun and sea and emphasizes innovative seasonal menus that explore the exotic reaches of the Far East and the tropics.
