Chef Kaldrovich Designs Complete Culinary Experiences for Every Taste
with Themed Wine Dinners at Sea Glass



Cape Elizabeth, March 9, 2010..........Fresh from the James Beard Foundation House in New York, where Chef Mitchell Kaldrovich's "New England with A Twist" menu was greeted with enormous praise on February 27th , the chef returns to Sea Glass at Inn by the Sea with several special menus, paired with wine and local beer, that offer a range of culinary experience for every taste.

According to Kaldrovich, there's more room for a chef's personal expression when creating multi course menus paired with wine.

"I love to share my passion for food with others, and can better achieve a particular effect when presenting a complete menu. By focusing on a certain geographical region, or balancing flavor intensity between food and wine, I can create a very specific experience," he said. "Wine and beer complement food, help set the tone, and enhance taste by coaxing out mild flavors, or adding to dominant flavors with contrast."
" Whether it's beer with winter comfort food for fun, or a celebration of a region, wine dinners offer a complete experience," the chef stated.

March 11th: Chef Kaldrovich's menu will celebrate great Italian food and wine in Sea Glass. Campania's largest wine producer and vineyard owner, Terredora has been on the forefront of Italy's wine renaissance since 1978. Winemaker Lucio Mastroberadino will join the chef to present their five course Terredora wine dinner featuring grilled Maine Lobster with Carmelized Cauliflower, Potato Gnocchi Margherita and Slow Braised Veal Cheeks with green Pepper-Parmesan Polenta, Broccoli Rabe and Roasted Mushroom Sauce. March 25th: Gritty's founder Ed Stebbens and Charles O'Brien, leaders in the microbrew revolution, will join the chef in his first ever, four course beer dinner, celebrating local beer and winter comfort food. Gritty's, locally produced small batch ales will accompany Beer Tempura Shrimp, Grilled Bison Sliders with Chipolte Aioli and Sweet Potato Chips, Spiced Pork Chile with Braised Beans and a Chocolate Brioche Bread Pudding. April 8th Guests at Sea Glass will enjoy the first taste of Shipyards summer brew, and a fall preview of their Smashed Pumpkin ale with a dinner designed to celebrate Maine's local beer.
May 6th and May 20th a selection of French and Spanish wines will be paired with regional menus.
Currently Sea Glass is offering a delectable, and very affordable three course menu for $30.10 during Maine's restaurant week.

About Chef Mitchell Kaldrovich: Chef Mitchell Kaldrovich was invited to cook at the James Beard House in New York on February 27th. His menu, New England with a Twist featured fresh Maine ingredients including his signature Pan Seared Maine Sea Scallops, Lobster and Seafood Cerviche, Atlantic Cod and Lobster Chowder, and Cold Spring Farm Short Ribs. The chef enjoys celebrating all things Maine in the new ocean view Sea Glass at Inn by the Sea, on Crescent Beach in Maine. American born, but raised in Argentina chef enjoyed cooking as a young boy under his grandmother's direction. His career began at Galani Restaurant, a Four Star restaurant in Buenos Aires. He then worked at the L'Orangerie Restaurant in West Hollywood, The Duck Club in Monterey, California, the La Palma D'Or in the Biltmore Hotel in Coral Gables Florida, and the Llao Llao Hotel & Resort in Patagonia. Prior to opening Sea Glass at Inn by the Sea in 2008, he was Executive Chef at Plump Jack Caf� in Squaw Valley California.
