La Boca Set To Open In August 2006

July-2006: Santa Fe, New Mexico , La Boca set to open in August 2006.
James Campbell Caruso-Former El Farol Chef and author of El Farol:Tapas and Spanish Cuisine will be opening a new restaurant in downtown Santa Fe, New Mexico. La Boca will be an exciting blend of traditional and innovative Mediterranean tapas. Chef Caruso will offer full lunch and dinner as well as wines from Spain, Italy, France and Argentina.
Tapas menu will include raw tuna salad w/ manzanilla olives. Spicy steamed clams w/ pancetta and coriander spiced lamb empanadas w/ harissa. Entrees will include Roasted Halibut w/ pinon-raisin vinaigrette, citrus marinated salmon w/ lemon-couscous salad and filet mignon al la plancha w/ cabrales mashed potatoes.
