First time restaurateur Michael Merida
has opened a Latin fusion restaurant called Maize Cantina on Long Islands North Shore in Commack. Michael Has spent time in some of the worlds best kitchens to include: The Fat Duck, El Bulli, Ryu Gin, Plaza Athenee',Le bernadin, to name a few. After years of honing his skills at these fine establishments he has gone back to his Latin roots to bring a more casual cuisine to his native Long Island.His Mission: To serve freshly prepared food using the highest quality ingredients in a casual environment and to make people happy!
The Menu:
Venezuelan style Arepas like El Rey- Slow braised shortribs of beef, black beans, queso fresco, crispy plantains, cilantro crema
El Salvador Pupusas like La cluck- Chipotle hashbrowns, pickled red onions, tomato jam over soft pork and cheese stuffed tortillas.
Mexico- soft Tacos: El Pollo- slow roasted chicken, guajillo pepper, jalapeno chimichuri, avocado, cotija cheese.
Putting an American twist on the classic Latin foods is what inspires Chef Merida and his creative mind.
