Leading Hudson Valley Restaurant Pioneering Farm To Table Movement

This week, owner and general manager Ryan Zygmunt announced that the Crystal Inn has added two local meat producers to its list of suppliers. Lowland Farm on Prices Switch road - a scant few miles from the Crystal Inn - will provide prime beef products and the Hudson Valley Cattle Company in Ulster County will supply all fresh poultry products.
The addition of locally sourced meats puts the Crystal Inn among an elite group of Hudson Valley restaurants demonstrating a deep commitment to the farm-to-table ethic. The Crystal has long sourced its produce from local producers such as the Scheuermann Farms and other local organic producers including the Kitchen Garden. Crystal Inn Chef James Haurey frequently spends his mornings hand picking produce from the fields of the Kitchen Garden, also just a mile or so away, to prepare that same evening for Crystal Inn diners.
Chef Haurey is featuring Lowand Farm Beef in the Crystal's signature, Sliced Angus Rib Steak with Caramelized Shallots and Aged Cheddar Mashed Potatoes. Hudson Valley Cattle Company chicken is featured in the Crystal's Whole Roasted Free Range Chicken alongside Homemade Cavatelli Pasta with Broccoli, Spinach, Roasted Tomato, Capers and Feta Cheese.
