Maslow 6 In Tribeca Expands With A New Wine Bar

Tribeca's Maslow 6 Wine Shop expands with the opening of the new Maslow 6 Wine Bar next door at 211a West Broadway (no phone yet, www.maslow6.com) on May 17, 2012. Owner Keri Jackson Kunzle, a former technology executive, followed her passion for wine when she opened the Maslow 6 Wine Shop in 2009, offering not only wine but also wine education and exploration through the Maslow 6 Wine Club and seminars, fostering the shared experience intrinsic to drinking wine.

To encourage wine discovery, which is a key part of the Maslow 6 wine experience, Maslow 6 Wine Bar will offer 20-30 by-the-glass selections daily ($8-$17) and open almost any bottle on the list with a two-glass commitment (with the exception of some rare wines). The eclectic wine list features small producers from around the world, including Grower Champagnes, lesser-known regions such as the Finger Lakes and Austria, as well as a rare selection of older vintages and cult wines such as Screaming Eagle and Harlan Estate rarely seen on wine bar wine lists. The wine bar will allow Keri to expand Maslow 6's popular educational series of sommelier and visiting winemaker tastings, seminars and wine classes.

As unique features, guests will be able to not only find many of the wines offered in the wine bar at the Maslow 6 Wine Shop next door but also purchase in the wine store any wine not on the wine list (by the glass or bottle) and enjoy it at the wine bar with a $25 corkage fee. On weekends, Freaky Fridays will offer an opportunity to try unusual wines - wines likely never tasted before and otherwise not available or easily found. Exciting, unusual finds from all over the world will be opened on Friday nights, from little known wine regions such as Irouleguy, Chateaumeillant, Brazil, Uruguay, Bulgaria to uncommon grapes such as Bukettraube.

Beer is another focus at Maslow 6 Wine Bar, which features a seasonal list of over thirty craft beers from around the world. From traditional lagers to American strong ales to saison and vintage beers, the list showcases a variety of styles and offers a selection designed to entice beer aficionados along with wine lovers.

The kitchen is overseen by Executive Chef Nickolas Kipper, who got his start in two celebrated kitchens in Kansas City, MO: Michael Smith Restaurant and Julian, where he worked under two James Beard Award winners for Best Chef Midwest, chefs Michael Smith and Celina Tio. In 2010, he moved to New York and joined the kitchen at Bouley, where he worked for a year and a half. He then joined the opening team at Tenpenny and was promoted to executive chef after the departure of the original chef.

Kipper's approachable small plates menu features seasonal dishes inspired by the Greenmarket and playful takes on American comfort food. Artisanal breads are accompanied by housemade spreads including liptauer, fava bean and pecorino, smoked lemon jam, and duck confit with prune jam. Lamb meatballs come wrapped in puff pastry with red pepper sauce in his Meatball Wellington, while Chicken & Waffles are breaded and lightly fried chicken livers atop an airy waffle drizzled with Blis maple syrup. Pork Cheeks come braised then breaded and fried, while Mac 'n' Cheese 'n' Truffles is a decadent blend of four artisanal cheeses and truffles. Daily bruschetta, panini and a selection of farmstead cheeses and charcuterie round out the menu. In family-friendly Tribeca, the menu offers kids a Grilled Cheese Panini with a choice of cheddar and apple, four cheese or old-fashioned American cheese.

The decor plays off the space's rustic and industrial influences, while highlighting the connection to seasonal market-driven cooking. A long glass wall separates the wine bar from the wine store next door. Lining the exposed brick wall, a row of dist
