Maverick Returns To Its Roots With New Chef & New Menu

Maverick, located at 3316 17th Street in San Francisco, introduces new Executive Chef, Emmanuel Eng and his new menu which redefines modern regional American food at this Mission hot spot. Maverick celebrates the spirit of Samuel Maverick, an 1800's Texas cattle rancher who refused to brand his herd: forever immortalizing himself as a radical and independent thinker. Emmanuel's menu is a clear response to this philosophy with original dishes that revitalize regional American food in new and exciting ways.

The New Maverick
Hailing from Portland, Oregon, and a former student of the Rhode Island School of Design, Emmanuel always exhibited a spark of creativity. However, when it became clear art school was not a good fit, he focused his attention on a new applied art - cooking. Working at some of the most influential restaurants in the country, including Aqua, Quince, Boulevard, and Sons & Daughters, Emmanuel credits many of his mentors at these restaurants as helping him to mature as a chef. In late 2011, Emmanuel was brought in by owners Scott Youkilis and Michael Pierce as the new Chef de Cuisine, and after only four months in the position was quickly promoted to Executive Chef, making it clear that there was something special and unique in the young chef. Heavily influenced by seasonality and the abundance of produce available in the Bay Area, Emmanuel's personal cooking style is a natural fit for Maverick - a strong focus on Classic American flavors and flavor combinations unique to the American landscape of gastronomy.

Modern Regional American
Emmanuel has created a menu that offers a modern but sophisticated twist on familiar favorites. Emmanuel's take on these classics reflects his commitment to regional food, and his artistic flair which adds an element of excitement to every dish. The cuisine, a return to Maverick's roots, is both a direct translation of American flavors, and an intellectual one, where common American ingredient combinations are the inspiration for a completely new dish. Adding sharable starters or "snacks" to the menu, Emmanuel's creative approach shines with Crispy Sweetbreads with a "Cool Ranch" seasoning and sweet corn mousseline, or his Hot Shrimp Cocktail with horseradish custard, tomato and lemon. More substantial dishes include their Grilled Cheese and Tomato Soup with a house-made "Ritz Cracker" brioche and Blythedale Farm Camembert, and the Flat Iron "Carpetbagger" Steak with a potato shallot cake, creamed spinach, house made rhubarb "A1", and oyster and arugula pesto. Emmanuel has also added monthly rotating three-course regional dinners for $35 per person, and is putting his own spin on Maverick's popular Butter Burger, available only on the Saturday brunch menu for $13. Emmanuel's new menu will go live on June 1st.
