NEWBURY COLLEGE LAUNCHES "CELEBRITY CHEFS" SERIES AND INVITES ALUM LARRY MATTHEWS FROM PORTLAND'S BACK BAY GRILL

BROOKLINE, MA: Training to become a chef has taken on a new dimension at Newbury College. Over the past 40 years, Newbury's culinary program has turned out some of New England's top chefs. Now they are returning the favor in a mouth-watering new class.

In a class called "Classic Cuisine," teacher Chef Madonna Berry will share the stove with four popular "celebrity" chefs. Beginning Nov. 16, alumni chefs who own or are in leadership positions at popular eateries will teach their unique culinary styles to this new class in the Roger Saunders School of Hotel and Restaurant Management at Newbury.

This is the first time alumni have come into the kitchen classroom to share their experience and talents with our students, said Chef Berry. It is a totally new concept and a wonderful opportunity for the students.

Corey Comeau, Class of '93, the Executive Chef of Stephanie's on Newbury Street; Nick Speros, '97, Executive Chef of Soma in Beverly; Paul Turano, '95, Executive Chef and owner of /Tryst/ in Arlington and Spitfire in Canton; Larry Matthews, Jr, '95, owner and Executive Chef of the /Back Bay Grill/ in Portland, Maine, are the tentative list of chefs who will be joining Chef Berry in teaching a four week class to Newbury's latest group of "chefs-to-be."

The chefs will each work one day with Berry and the students to create and execute menus for a four-course meal. Each will bring a different set of ideas reflecting their own culinary style.

Berry says, "The students will be exposed to new 'flavor profiles' and the techniques developed by these successful chefs. I hope we will be able to offer a course like this every year from now on. We have many graduates who are in leadership roles in restaurants, so we have a large pool of experts to draw from."

Larry Matthews from Back Bay Grill in Portland, Maine will be teaching on Thursday, December 7. He is looking forward to the lesson saying, "I really enjoyed my classes at Newbury and it's an honor to be invited back. I'm really excited about meeting some of the students there." Matthews added, "I think it's a great idea to have a chef who is making his career as a chef come back to talk to students."

Newbury College is a private coeducational institution with about 900 fulltime students. The school offers a wide variety of career-oriented bachelor and associate degree programs, with individual attention from faculty with real-world experience. The Saunders School is one of three schools that comprise the College.
