Nico At The Gatsby Masion Executive Chef Richard Lanza Cooks At 5th Annual Toast Of The Town Benefit For United Cerebral Palsy Association

Nico at The Gatsby Mansion Executive Chef Richard Lanza will cook a special dish for the fifth annual Toast of the Town to benefit the United Cerebral Palsy Association of Nassau County. The event will take place on Wednesday, September 24 from 6 p.m. - 9 p.m. at Chateau Briand . Lanza will cook mushroom "dusted" sea scallops with fennel celery slaw. His recipes are as follows:

Mushroom "Dusted" Sea Scallops
2 oz. dry porcini mushrooms or dried wild mushroom blend
Salt & pepper
Dry diver sea scallops U-10 large
Olive oil as needed

Method: Heat skillet with oil till hot. Season scallops with salt and pepper. Dredge one side of the scallop with mushroom powder.
Place mushroom side down into heat till desired doneness 1- 2 minutes, then flip for one more minute.
Yield: Appetizer portion, two scallops per person for five people

Fennel Celery Slaw
1 head celery root - peeled and cut into julienne strips
2 - heads fennel shaved thin on mandolin
2 cups mayo
4 lemons juiced
2 tbl. sugar
2 tbl. chopped tarragon and chives
Salt & pepper

Method: Mix mayo with lemon juice and chopped herbs. Season with salt and pepper. Add cut fennel and celery root. Combine well
Yield: One quart for five people
