Nombe Hosts Spring-inspired Namazake Event
Sake aficionados consider the fruit forward unpasteurized sake, referred to as Namazake or Namas, the Beaujolais Nouveau of the sake world. Nombe is excited to offer a rare tasting of four different regional Namazakes, each paired with a dish by Chef Noriyuki Sugie. The festivities takes place on Thursday, March 29th, at 7:30 pm. Cost is $40 per person excluding tax and gratuity.
Traditionally, these young sakes were taken from the first third batches of the sake-brewing cycle. By bottling without pasteurization, some residual active cultures are left behind, creating a lively flavor profile with a finishing acidity that bellies some of the sweetness that lingers on the palate. Bottled by the end of January, Namazakes are typically available for consumption by March.
Nombe's co-owner and sake sommelier Gil Payne has hand-selected four Namazakes from different regions, showcasing the various brewers' art.

- Ichinokura NamaGenshu Nigori - Miyagi-ken
- Harushika Shiboribana - Nara-ken
