Two classically trained chefs join forces for one special dinner on Tuesday, July 22. Matthew Ridgway, chef and owner of The PASS restaurant, in Rosemont, NJ, hosts chef Christopher Kearse, from Will BYOB.
The prix fixe meal starts with an apertivo and an amuse, followed by six courses. The menu is decidedly French, and designed to showcase both classic techniques and flavors, and also dishes with more contemporary takes on French cuisine. This BYOB event is $79 pp, and limited to one seating of 50 guests. The PASS is an official tasting room for Sean Thackrey wines, so Thackrey wines are available by the bottle.
Chef Kearse has previously worked at Tru, in Chicago, Lacroix at the Rittenhouse Hotel, Pumpkin, and Blackfish. His restaurant, Will, is a modern French inspired BYOB, located on East Passyunk Avenue in the heart of South Philadelphia. The PASS brings French cuisine to a rustic country setting a few miles upriver from New Hope and Lambertville. Ridgway was a saucier for Jean-Marie Lacroix at the Fountain Room in the Four Seasons, before serving as chef de cuisine at Lacroix, and later as chef de cuisine for chef Joel Antunes.
