The Omni Bedford Springs Resort & Spa Takes Dining Up A Notch With New Concepts And Menus For The Crystal Room And 1796 Room

The Omni Bedford Springs Resort & Spa is setting quite a table for the summer ahead with new dining concepts and menus at The Crystal Room and 1796 Room. The historic resort in Pennsylvania's Allegheny Mountain region is taking both dining experiences up a notch with upscale atmospheres and a new focus on local, seasonal and organic ingredients.

The 1796 Room:
Named for the year that Dr. John Anderson purchased the land upon which the resort now stands, 1796 Room has now been re-launched as a signature steak and chophouse, serving steaks, chops, fish and fowl of the highest quality. Creating a relaxed yet upscale atmosphere of warm sophistications, the new 1796 Room is a dining experience that's not to be missed.

The restaurant has added an extra day to its weekly schedule, serving dinner from Monday through Saturday. All dishes are of the "simple prep" variety, with appetizers and "seconds" such as Chesapeake Bay Oysters Rockefeller; Beef Carpaccio with Vidalia Onion Marmalade and local arugula; and Baked Vidalia Onion Soup. New main dishes include Prime Spice Rubbed Bone-in Ribeye; Heirloom Bone-in Pork Chop; and Herb Crusted Halibut with German potatoes, saut�ed spinach and tomato ragout.

Examples of locally-sourced ingredients featured on the 1796 Room menu include Dove Song goat cheese, Lancaster Bacon, wild mushrooms and duck sausage, all sourced from Pennsylvania, and Trickling Springs ice cream from nearby Maryland.

All meats are prepared on the restaurant's new Montague broiler to ensure juiciness, tenderness and flavor. Steaks and chops are served with choice of two accompaniments and choice of sauce including the resort's signature steak sauce or roaring 40's blue cheese butter, also sourced in Pennsylvania.

The Crystal Room:
One of the oldest restaurants in America and the resort's main dining room for years, the historic Crystal Room has re-launched with a focus on personalized service and innovative cuisine inspired by locally grown produce. The re-envisioned restaurant offers breakfast buffet and a la carte dinner daily, as well as Sunday brunch, all wrapped in a sophisticated, upscale and traditional ambiance. A new menu will be offered for dinner on Saturday and Sunday evenings to provide a different dining experience to guests visiting the resort for the weekend, and in place of the traditional "bread basket," The Crystal Room will serve the resort's signature popovers with each meal.

Local and regional flavors are masterfully showcased in The Crystal Room's exhibition kitchen. Starters and "seconds" include Pancetta Wrapped Shrimp with vodka horseradish r�moulade; Lobster Mac & Cheese with panko breadcrumbs, dove song dairy goat cheese and manchego, Consomm� of Beef with local mushrooms and Petite Goat Cheese Sandwich; and Balsamic Strawberry and Spinach Salad. Signature main dishes include Thyme Basted Rack of Lamb with Ratatouille, demi-glace, garlic custard and tapenade; Grilled Salmon Fillet with Somerset County "potato risotto", wilted spinach and citrus pan sauce; and Pan Seared Laurel Hills Farm Trout, sourced locally in Pennsylvania and served with an almond crust and lemon-brown butter.
