Philip A. Mahl Joined Chef Ian Scollay At Maidstone
(April 17, 2006, Southampton New York) Philip A. Mahl has recently joined the culinary team of Chef Ian Scollay Executive Chef at the Maidstone Club in Southampton New York. Philip worked with Chef Scollay at La Grenouille in Manhattan after a stint at Thomas Keller's Per Se. Later, Philip worked under Chef Tony Esenault at the historic and now shuttered Dining Room at the Ritz Carlton in Boston (Chef Esenault is now executive chef at Alain Ducasse at the Essex House NYC).
Before joining Chef Scollay at the Maidstone Club, Philip just completed a year of service under Chef Fabio Trabocchi at Maestro in the Ritz-Carlton Tyson's Corner Virginia. Before returning to the States from France Philip interned at Restaurant Michel Rostang in Paris and with Chef Patrick Henriroux at the fabled La Pyramide of Fernand-Point in Vienne. Philip received his formal training at l'Institut Paul Bocuse Httellerie et Arts Culinaire, Lyon France.
