At the recent American Culinary Federation Annual Gala, Dan Reilly, executive chef of the Union League, was named Culinarian of the Year, a prestigious award given to a chef who demonstrates exceptional dedication to the profession and who participates in a large number of charitable events. It is a tribute to his vast knowledge of different cuisines, leadership abilities and quantity of competitive cooking awards.
AT the Union League, Chef Reilly is a master at doing volume. On a typical day, he feeds up to 2,000 people in three restaurants, Cafe Meredith, the Boker Room and the North and South Marble Rooms, and 13 banquet rooms. On a busy day, he oversees 24 banquets. That's a big job, and the 2,000th is always as good as the first. He balances maintaining the Union League's culinary traditions with keeping the menu offerings as up-to-date as the city's restaurant boom.
