The Red Hen, a Locally-Inspired Fine Dining Restaurant in Lexington, is Now Open

LEXINGTON, Virginia, September 9, 2008-The Red Hen, a fine dining restaurant driven by the food of Virginia's Shenandoah region, is proud to announce its grand opening. Located in a newly renovated, 115-year-old building in the heart of Lexington's historic downtown, The Red Hen features innovative cuisine and a unique wine list in a sophisticated yet comfortable atmosphere.

At The Red Hen, local flavors star in dishes that are original and forward thinking, yet still accessible to the average diner. Executive Chef Tucker Yoder leads the culinary team in creating a dining experience unlike anything else found in the area. The menu features locally grown produce and meat, with several local farms growing vegetables and raising meat specifically for the restaurant. Chef Yoder has cooked in many of the best kitchens in the state, including OXO Restaurant, the Boar's Head Inn, and the Clifton Inn.

The wine list has been carefully selected to reflect The Red Hen's philosophy as well as to accentuate Chef Yoder's menu. The list focuses on wines that come from vineyards that use organic or biodynamic farming principles, hand-harvesting, and a minimum of additives or manipulation in the fermenting process, allowing for each wine to express its place of origin. These "natural wines" represent a new and exciting trend in wine, one that The Red Hen is looking forward to sharing with its patrons. Distinctive beers, as well as a full bar, are also available.

The Red Hen is among a small group of restaurants selected to be a part of the Virginia Green program. Inside the restaurant, the majority of the wood used in the space, including the dining room tables, has been re-harvested from other area buildings. Water-saving appliances and composting procedures make certain that the restaurant maintains a commitment to the health of the environment. The Red Hen is a member of the nationwide 1% For the Planet program, donating a percentage of its gross revenue to local and national environmental organizations.
