Ridgewood New Jersey's authentic Neapolitan trattoria A Mano, will host celebrated Italian pastry master Sabatino Sirica, for an intimate viewing of the art of pastry. The esteemed maestro will teach the fundamentals of traditional Italian pastry, for the first time in the United States, at demonstrations and baking classes on January 12-15, 2011 by reservation only.

With more than a half century of experience with the craftsmanship of pastry, Mr. Sirica will exhibit his expert techniques and share baking secrets at the limited engagements. At the baking classes, participants will enjoy a rare opportunity to work hands-on with the artisan, while guests at the demonstrations will take an up- close look at perfecting pastry.

During his appearances at A Mano, the celebrated baker will showcase signature Neapolitan desserts such as sfogliatelle - a classic Italian ricotta filled pastry, rum baba - a delicious cake flavored with rum, pasteria - a traditional Neapolitan specialty for the Easter season, and more.

Born in 1941 in Sarno, Italy, founder and owner of the renowned pastry shop, Pasticciera Sirica in Naples, Italy, Mr. Sirica has been a member of the Association of Neapolitan bakers for 15 years, holding titles as Secretary and Treasurer. He has graced the major Italian television network, RAI TV, with many appearances, and is well known for his prestigious clients and collaborations, as well as his generous philanthropy.

A Mano is one of only three US restaurants to receive the prestigious certifications to offer authentic Neapolitan pizza, from both recognized authorities of Naples, Italy, the Verace Pizza Napoletana and Associazone Pizzaiuoli Napoletani.

The exacting standards are what stand A Mano apart from the rest, from the expertise of the pizzaiuolo (the specially-trained pizza chef) to the use of ingredients imported from Naples (from all natural Caputo flour to the San Marzano tomatoes, grown in the foothills of Mt Vesuvio). Down to the tiles and equipment, from floor to ceiling, the restaurant's makeup is imported from Italy. Its twin domed ovens with round chimneys, hand-built on site by Neapolitan Artisans using stones and volcanic soil imported from Naples, are the centerpiece of the restaurant, stretching to the ceiling of the two-story dining room. The architecture of these wood-fired ovens allows them to reach temperatures of 1,000 degrees, creating blistering, bubbling pizza in less than two minutes.
